Slow Cooker Mexican Pork Fiesta Flats™

Ingredients

  • 2 tablespoons olive oil
  • 1 (3-pound) boneless pork roast
  • 1 large yellow onion, thinly sliced
  • 2 cups water
  • 1/2 package (1.25 ounces) ORTEGA&reg Taco Seasoning Mix or 40% Less Sodium Taco Seasoning Mix
  • 12 ORTEGA&reg Fiesta Flats&#8482 Flat Bottom Taco Shells
  • Sour cream, if desired

Preparation

  1. Heat olive oil in large skillet over medium-high heat and add pork roast. Cook, turning several times, until well-browned on all sides, approximately 7-9 minutes. Add sliced onions and continue cooking for 3-4 minutes, until onions are softened.
  2. Place pork and onions in slow cooker. Pour water into skillet and scrape up any browned bits from bottom of pan. Add water and pan juices to slow cooker with taco seasoning. Cook for 8 hours on low, until pork is tender and falling apart. Pull meat with two forks into shreds.
  3. To serve, mound pork into Fiesta Flats&#8482 and top with taco sauce and sour cream, if desired.

Mini-Meatball Fiesta Flats™

Ingredients

  • 4 ORTEGA&reg Taco Shells (any variety)
  • 1/2 pound ground pork
  • 1/2 package (1.25 ounces) ORTEGA&reg Taco Seasoning Mix or 40% Less Sodium Taco Seasoning Mix
  • 1 tablespoon vegetable oil
  • 1 can (10 ounces) ORTEGA&reg Mild Red Enchilada Sauce
  • 1/4 cup water
  • 2 ripe avocados
  • 1 package (1 ounce) ORTEGA&reg Guacamole Seasoning Mix
  • 12 ORTEGA&reg Fiesta Flats&#8482 Flat Bottom Taco Shells
  • Shredded lettuce

Preparation

  1. Place taco shells in food processor and pulse until coarse crumbs form. (Or place in re-sealable plastic bag and crush.) Combine crumbs, pork, and taco seasoning in mixing bowl.
  2. Form mixture into small meatballs, about 1/2 inch in diameter. Heat oil in large skillet and brown meatballs lightly, in batches if necessary, about 5 minutes per batch, turning frequently. Return meatballs to skillet and add enchilada sauce and water. Bring to boil over high heat; reduce heat and simmer gently for 15-20 minutes or until meatballs are thoroughly cooked.
  3. Meanwhile, mash avocados and stir in guacamole seasoning mix. Let rest in refrigerator according to package instructions.
  4. To serve, spoon meatballs and sauce into Fiesta Flats&#8482. Top each with shredded lettuce and guacamole.
